Mary Pat Rodriguez built Hibernia's wine program around the producers she visits each year in France. The cellar now holds more than 300 bottles, stored at a steady temperature until they are opened at the table. What you will find on the list
The collection is weighted toward France, with a strong Burgundy and Chablis selection alongside Loire whites, Alsace aromatics, and mature Bordeaux. Names that appear regularly include Hubert Lamy, Jean-Louis Chavy, Michel Mikulski, Antonin Guyon, Vincent Dauvissat, Louis Michel, Domaine Pichot, Chateau de Tracy, and Zind Humbrecht.
We also keep a focused Bordeaux range, including bottles from the 2005 vintage when availability allows. Many labels are imported directly for the restaurant and a portion is offered for retail purchase to take home. The list shifts with each annual trip, but Burgundy and Chablis remain the backbone of what we pour.

Tuesday lunch and dinner menus lean on local seafood, French technique, and the Asian accents Raoul brings back from his annual travels.
